Baked Avacado Starter

BAKED AVACADO
[ Starter ]
Serves: 4
Cooking time: 45 minutes
Ingredients:
1 tbs lemon juice
25 g (1 oz) butter
2 ripe avocados
1 small onion - finely diced
50 g (2 oz) mushrooms - sliced
2 tsp plain flour
150 ml (1/4 pint) milk
1 tsp Italian Herb Seasoning
1/2 tsp salt
50 g (2 oz) cooked ham
25 g (1 oz) white breadcrumbs
25 g (1 oz) Cheddar cheese - grated
Method:
Pre-heat the oven to 375F, 190C, Gas Mark 5.
Cut each avocado in half and remove the stone.
Scoop out the flesh, leaving the shells intact, roughly chop and sprinkle with lemon juice.
Melt the butter in a saucepan and fry the onion and mushrooms for 2-3 minutes.
Stir in the flour and cook for 1 minute. Stir in the milk, Italian Herb Seasoning, salt, ham and avocado flesh.
Bring to the boil and simmer for 1-2 minutes.
Divide the mixture between the four avocado shells and sprinkle with the breadcrumbs and cheese.
Bake in the oven for 20-25 minutes or until golden brown.
